What's Happenin Dude? Happy St. Patrick's Day!

Well well well....it's been a few weeks since I did a post, so I wanted to do a quick update on what's been keeping us busy!

Colby recently completed his science project for school and he chose to do an experiment with static electricity. Here he is happily working on his poster. He did a great job and had fun showing his class what he learned.

Here's a cute picture of Huge taking a nap with his daddy. I couldn't resist. Brett has been working hard for our family. He has also been working out--woot woot! He was recently called as a primary teacher for the 6 year old boys in our ward. I sat in on his class the first week and he did a great job. Brett is a good man, I'm glad he gets to teach those cute boys.

Luke has continued growing, drooling, and being cute. He is currently cutting his top teeth and has been battling constipation, but he still has lots of smiles hugs and kisses for everyone! His main babbling is still da dah da. He loves food. Some favorites are bananas, graham crackers, and all the other standard purees!

We found out that Colby got into the Idaho Science and Technology Charter School by lottery last week. We are so excited about it! He also started private art lessons 2 weeks ago and is loving them. I'll do a post of the projects he has done so far soon! Colby has also been enjoying 11 year old scouts. He is always excited to go and has been working on several badges.

Jolie continues to be cute and sassy. Last night she said to Brett and I, "Ice cream doesn't talk, we just eat it right?" We said,  "RIGHT." She loves her best friend Gracie, spending time with Grandma Olivia (and Grandma Diane when she or we visit), going to story time and calling everyone "Stinky". Don't be offended if she says it to you...I think it's a term of endearment.

Huge has learned to feed the dog. Meatloaf loves it of course. He also laughs his head off whenever he can reach the dog and squeeze him. It's really cute and funny.

Jolie is a good helper. She especially loves to help when I'm cooking. Today she made all kinds of bread dough snakes. It was a party. She is a sunbeam this year and that has been a challenge! She doesn't like to go to primary. We're working on it. She always has a fun time, but getting her situated is a booger.

This is the only picture of me, but I've been busy too! I've had quite a few small catering orders lately that I have been so grateful for! They have paid for the the rest of our upcoming spring break trip and we can't wait! I've also been running. I have a couple of races coming up in April and May.

This was our St. Patrick's day dinner! We had green kolaches, green oven fries and green peas lol! I had a blast with the kids today being silly. We also had green eggs, green pancakes, and greenish chocolate milk for breakfast. When I told the kids we were having leprechaun eggs for breakfast, Colby said, "I'm pretty sure leprechauns don't lay eggs." He's such a wise acre.

A Bit O'Baking

I've made a lot of cupcakes lately. I think in the last few weeks, I've made about 40 dozen! I didn't even take pictures of all the kinds because I...was, well, careless! I feel bad about it but I'm hoping there will be more to come so I'll try and do better!

Pumpkin cupcake dipped in ganache decorated with cream cheese icing and sprinkled with cinamon sugar and finished with ganache stripes. (Brett's favorite)

Chocolate raspberry cupcake dipped in ganache and decorated with raspberry cheesecake buttercream and chocolate shavings.

The "Elvis" cupcake. A banana cupcake decorated with peanut butter cream cheese frosting and a ganache center with chocolate shavings. (Colby almost died from tastebud pleasure when he tried this cupcake)

Red Velvet with Cream Cheese Frosting

Left: Vanilla cupcake with Lemon Berry Buttercream
Right: Chocolate cupcake with Mint Buttercream and Chocolate Swiss Meringue Buttercream with chocolate shavings.

My last Pate a Choux class at Rush's with a cute student that asked to have her picture take with me and the "Swans In Love"!

Jolie's sugar cookie snakes from Valentine's Day--They were a little bit over loved before being baked, but look how cute!
